These quick no-bake bites are a healthy alternative to cookies for an afternoon snack.
Put all ingredients in the food processor and pulse until coarsely ground and well-blended. Use your hands to roll the mixture into 1-inch balls and arrange the balls on a parchment-lined baking sheet. Refrigerate for 30 minutes.
I made these the other day and I like them best straight from the freezer. The consistency is dense, but not too hard. I thought they were too soft when kept in the refrigerator. I will definitely make these again! They're a great, healthy snack/dessert.
